BOLOGNA
Bologna is an American-style sausage similar to Italian mortadella that can be made out of either chicken, turkey, beef, or pork. It is finely chopped or ground and contains lard, but without any visible pieces of fat. It is packed into casings with a variety of shapes including ring, chub, loaf, or rope. It is cooked, sometimes smoked, and sold with the casing removed and ready to eat.
